For me, dinner needs to be on the table about 30 minutes after I walk in the door, so I do A LOT of prep work in the mornings and evenings. I also do some cooking on the weekends in order to make my weeks go a little smoother. Hopefully, you’ll be able to look at what I do and get tips on how to make your own dinner preparation smoother!

You’ll notice that every week starts with a meal plan that typically includes at least one vegetarian dish, one fish, and one meat dish—chicken, pork or beef. (Quite frequently, I have two meat dishes or two vegetarian dishes and fish often goes by the wayside. The idea is that this gives me a frame work to plan my meals from.)

I love my Crock Pot. I don’t think any working mom can live without one!

I rarely order in take-out. When I do, it’s usually Chinese food—steamed chicken and broccoli or Chicken Mei Fun that can be used for the kids lunches during the week.
